# What You'll Need:

01 - 1 cup dried brown or green lentils, rinsed

# How to Cook:

01 - Heat a splash of oil in a large pot over medium heat. Add chopped onion and sauté for 3 to 4 minutes until translucent.
02 - Stir in minced garlic and grated ginger; cook for 1 minute until fragrant.
03 - Add diced carrots, chopped bell pepper, diced zucchini, and cauliflower florets. Sauté for 5 minutes, stirring occasionally.
04 - Sprinkle in curry powder, ground cumin, ground coriander, turmeric, and cayenne. Stir and toast spices for 1 minute.
05 - Add rinsed lentils, canned diced tomatoes with juices, and vegetable broth. Bring to a boil, then reduce to a simmer.
06 - Cover the pot and simmer for 20 minutes, stirring occasionally, until lentils and vegetables are tender.
07 - Stir in coconut milk and spinach leaves. Simmer uncovered for another 5 to 7 minutes until spinach wilts and curry thickens.
08 - Adjust salt and black pepper to taste before serving.
09 - Ladle the curry hot into bowls. Garnish with chopped cilantro and lemon wedges.
